Flavour Profile
There’s a well-developed, nutty flavour to this cheese, which gets sharper the longer it’s kept. You’ll find it tastes a little like Pecorino or Manchego, with a cream-coloured paste that’s slightly milky.
Drink pairing
We think a mature and slightly sharp cheese pairs well with a light red such as Barons Red from New Hall Vineyard. Its berry aromas and light colour are a great match for a nutty cheese like Spenwood.
About the producer
Artisan creamery Village Maid Cheese is a family-run, award-winning dairy, making ewe’s milk cheeses from a village in Berkshire. The popular cheeses are made at purpose-built facilities using methods learned in Sardinia.
How to enjoy
As Spenwood is similar to Manchego and Pecorino, it’s great in pasta and risottos as a substitute for Parmesan. A slice of it alone is also delicious when paired with a deep red wine.
