Flavour Profile: The flavour here is mild, buttery and rich and retains the distinctive aftertaste of goat’s milk with a hint of bitterness, as you would typically find in goat’s cheeses.
Drink Pairing: Nababbo is a special cheese, because its flavours make it perfect for lots of different wines. So, whether your poison is White, Red or Rose, this cheese will compliment. We love it with a Primitivo, Red: Carlomagno, Rose: Risotto or with a fruity white: Madeleine Angevine.
About the Maker: “In more than 30 years we have worked in the world of cheese making and the Valtaleggio farming community, we have constantly striven to unearth and bring to life the VALUES that distinguished our specific and distinctive way of approaching our work and the finished product long before we ever founded the business.
These touchstone principles formed the foundation of the farming culture of the past and they have continued to shape and guide our choices, inspiring us to preserve and respect a generous helping of the traditions that are part of our very DNA”
How to Enjoy: This is another wonderful melting cheese. Toast a slice of ciabatta, drape delicate slices of prosciutto onto the bread, add a large hunk of the cheese and warm it in the oven until the cheese softens and starts oozing.
