Flavour Profile: This Cheese really has a bit of everything when it comes to flavour. Salty, herbaceous, spicy, tangy, there is definitely something for everyone with this blue! Even the rind has a fantastic sharpness, making Bleu d’Auvergne as strong as a stilton, what’s not to love?
Drink Pairing: To match the strength of this cheese, we recommend trying a glass of sweet Port to compete with Bleu d’Auvergne’s complex taste. Vista Allegre’s Fine Ruby Port is a great match for this cheese as it’s full of fruity and rich flavours that balance out this pungent blue.
About the Maker: Created in the South of France, cheesemonger Antoine Roussel conducted several tests to create the perfect blue in the 1850s. Today, Bleu d’Auvergne is made and aged in cool, wet cellars to make sure every wheel is flawless.
How to Enjoy: If you’re into blue, this cheese is very versatile. We love adding this cheese into our salad dressing or stirred into soup. It can even be enjoyed with a slice of apple or on a buttered baguette if you’re looking to tone down the taste.
