Flavour Profile: Aged for at least 6 months, Dale End Cheddar is mature with a distinctive, tangy bite and rich, long-lasting flavour.
Drinks Pairing: We love this with a red! Particularly, New Hall Barons Red!
About the Maker: Camphill Village Trust are based in Yorkshire and support people with learning and other disabilities. Alastair, a local lad who worked at Botton, travelled to Germany to learn his cheese-making trade. Using the Dairy Shorthorn’s rich, yellow milk Alastair makes a traditional clothbound Cheddar. Andy Swinscoe met Alastair by chance on a cheese-making course several years ago, when Alastair was trying to perfect Dale End Cheddar. Botton Creamery also make the, Summer Field Alpine-stlye, Moorland Tomme and Yorkshire Gouda.
How to Enjoy: Cheddar can be enjoyed in so many ways, that’s what makes it great! Enjoy it on it’s own, in a sarnie, or use it in cooking!
