About the Winemaker: “Etienne Daulny owns 16 hectares of vines split between the limestone-chalk soils of Verdigny and the deeper, clay-limestone of Chaudenay. Vines are spread over 50 different plots that are vinified separately before the blend. Most of Daulny’s wine is fermented and aged in temperature-controlled stainless steel tanks and does not undergo malolactic fermentation so it retains freshness and vibrancy. A small percentage of the wine is aged in used oak barrels in order to add complexity without tasting oaky.”
