Tom and Clare Noblet started to make cheese in 2015 on their dairy farm on the edge of the Lake District. Based on a traditional old ‘Dales’ recipe of the north of England.

Fellstone is aged for three months by which time it has the fresh lemony-lactic flavours of a good Wensleydale, with a supple, firmer texture. This is farmhouse Wensleydale how it used to be!

Flavour Profile: Based on a traditional old ‘dales’ recipe, Fellstone is similar to a good Wensleydale, but with a supple, firmer texture. It comes with fresh lemony-lactic flavours, reminiscent of a young cheddar.

Drink Pairing: We love this with a light white wine such as Muscadet Druet or with a cold Lager

About the Maker: Whin Yeats farm produced cheese before the Second World War, but then production stopped for a few decades until Tom and Clare Noblet took over and revived the farm to its former glory. They moved to this 250-acre farm in 2010 and set out to become dairy farmers. With 80 Friesian cows and 200 sheep, they set out to improve the farmland and biodiversity, planting 350 metres of hedgerow and over 2000 trees! Eventually, they were ready to produce this fantastic Fellstone cheese.
