Langres is a classic French milk washed rind cheese, originating in Langres of the Champagne region. Unusually, as the cheese matures it is not turned, giving it the distinctive dip in the top purposfully , this is used to pour champagne in. A strong and salty flavour is present beneath the pungent smell.
Run out of glasses? just pour some champagne in the dip and put a slit in the top to let the bubbles work their magic through the cheese.
