Flavour Profile: Rachel is bold in flavour with a distinct goaty taste that is mellowed out by its salty rind. While still a goats cheese it is more subtle and perfectly light on the tongue.

About the Maker: Rachel is made by White Lake Cheese and Rachel has become its star as no one else in the UK makes a washed rind goats’ cheese. When White Lake Cheese started making Rachel, it started out as a ‘regular’ hard goats’ cheese. One day a cheese developed some black moulds which Pete washed off with brine. This set off bacterial action which affected the character of the cheese in a way that he liked. White Lake are leaders in artisan cheese and have been going since 2004. They pride themselves on their creative experimentation in cheesemaking and their wacky ideas and experienced cheese makers have led to a variety of excellent cheeses!
How to Enjoy: We recommend you try this with the rind – Rachel is a fantastic introduction to trying rind as it enhances the flavour of the cheese beautifully. As well as it being the perfect rind introducer, this cheese is best nibbled, its complex enough to warrant being eaten alone
