Flavour Profile
Sweet yet savoury, rich yet accessible, St James Cheese delivers on its promise of flavours that are unique. The yellow-orange rind that’s created from washing the cheese in brine and turning it three times each week adds to its individual taste.
Drink pairing
A complex cheese can handle a rich, full-bodied port. We love pairing St James Cheese with Vista Alegre Fine Ruby Port, with its fruity tastes and aromas for a perfect flavour balance.
About the producer
This family-run ewe’s cheese dairy based in the Lake District makes only a small selection of St James Cheese. Cheesemaker Martin Gott and his partner Nicola milk their own flock of sheep daily, and their ewes are free to roam and feed on the diverse pasture around their farm. The credit these methods for the quality of the milk that produces St James Cheese.
How to enjoy
With its unique and complex flavours, we think this cheese is a winner enjoyed alone or with a classic after-dinner drink. That way, you’ll make the most of its individual taste and texture.
