This cheese gets its distinctive flavour from the Churra and Castellana sheep that are used. They are renowned for giving rich milk that’s high in fat and protein. These characteristics translate to the underlying sweetness balances with buttery, milky notes in the flavour. As the cheese ages, these flavours become more pronounced, making this cheese more distinctive than that of other pressed sheep’s milk cheeses.
Drink Pairing
As UB40 so correctly said: “Red, red wine”. As this is of the manchego variety it goes inpecibally with red, try it with the Marcelino Rioja Crianza, our phenomenal tempranillo.
