A hard cow’s milk cheese that’s sweet, robust and nutty, it’s perfectly ripened having been aged for just eight months.

There’s a smooth yet supple texture, with an odd crystal and a few small holes dotted throughout the paste.

Flavour Profile

You’ll notice a flavour that sits somewhere between a Gruyère and an Appenzeller. It’s not as sweet as an aged Gruyère thanks to its reduced maturing time, but it keeps the mature flavours that give Stärnächäs its award-winning taste.

Drink pairing

Miss Harry from Hewitson winemakers in Australia is a great pair for this Stärnächäs cheese. As it’s a carefully-balanced red with plenty of fruits and spices, it stands up the cheese’s strength while not overpowering its award-winning flavours.

About the producer

Stärnächäs, from Swiss affineur Walo von Mühlenen and cheesemaker Marcel Gabriel, is produced at the foot of the Säntis mountain near Appenzell, Switzerland. The famous Swiss affineur’s production and ripening methods have won multiple awards and critical acclaim.
